In May we considered the basics of "Herbs for Beginners".
Participants were shown how to make basic herb teas using fresh herbs and
tasted lemon balm and several others. After a trip around the herb gardens,
talking about the medicinal uses of plants such as motherwort, sage, goats
rue, mint, vervain and skullcap, we shared a salad which had been made from
dandelion leaves, lettuce, cucumber and a mystery ingredient – chickweed!
The salad was dressed with a herb oil and vinegar dressing including mint,
parsley, thyme and marjoram.
After lunch we talked about making herbal vinegars and
tinctures and how they were used and everyone was able to smell and taste a
selection of nettle, sage and rosemary vinegars and vervain, skullcap, lemon
balm and St John’s wort tinctures.
